Bubbles are a celebration! At Domaine Robineau, we produce our sparkling wines using the traditional method (second fermentation in the bottle) , with patience and exacting standards.

From elegant white Crémant de Loire to luscious rosé , our sparkling wines reflect our Val du Layon terroir and our expertise. Fine bubbles, incomparable freshness, and that little something extra that makes every moment special.

🎯 THE TRADITIONAL METHOD

🍾 A demanding method, specific to great sparkling wines

Our sparkling wines are made using the traditional method . It's the same technique. used for the great sparkling wines which we call Crémant de Loire.

⚗️ How does it work?

  1. First fermentation : A still wine (without bubbles) is made.
  2. Blending : Different vintages are blended to create the perfect balance
  3. Bottling : Add sugar and yeast, then bottle.
  4. Second fermentation in the bottle (bubbles are created)
  5. Raised on slats : Minimum 12 months (often longer with us)
  6. Riddling : The lees are moved down into the neck
  7. Disgorging : The lees are removed, and the liqueur is added.
  8. Rest : A few months to harmonize

The result? Fine and persistent bubbles, aromatic complexity, incomparable elegance.

Crémant de Loire showcases the Loire grape varieties, emblematic of the Loire Valley, which give it its fresh and elegant style:

  • Chenin Blanc : freshness, elegance, notes of white fruit
  • Cabernet Franc : for rosé wines, bright and fruity
  • Chardonnay : finesse, minerality (sometimes in blends)

  • High-quality base wines (hand-harvested, sorted)
  • A long aging process on slats (minimum 18 months)
  • A measured dosage (raw, not too sweet)

🌡️ TASTING TIPS

❄️ Serving temperature

6-8°C (nice and cool)

💡 Too cold = you can't smell the aromas
💡 Not cold enough = the wine seems heavy

🍾 Opening

  1. Remove the (aluminum) cap
  2. Unscrew the wire cage while holding the cork
  3. Hold the bottle at a 45° angle, turn it (not the cap!)
  4. Let the cork come out gently (a discreet psshhht, not "POP!")

🥂 Service

  • Pour in two stages: first 1/3, wait for the foam to settle, then top it up.
  • Fill 2/3 of the glass maximum
  • Use flutes or tulip glasses (not coupes!)

⏳ Conservation

  • Bottle closed : Store upright, in a cool place, away from light
  • Opened bottle : Drink on the same day (max 24 hours with a special stopper)
  • Aging potential : 2-3 years for Brut

After disgorging, a "dosage liquor" (sugar) is added. Here are the different levels:

❓ FAQ SPARKLING WINES

Are your Crémants dry or sweet?
Our Brut wines are dry (< 12 g/L of sugar). They are balanced, fresh, and not sweet.

How long can they be kept?
2-3 years for the Brut. But they are ready to drink as soon as you buy them!

When do we open them?
Whenever you want! No need to wait for a special occasion. Bubbles are available every day if you wish.

What does it go with?
Everything! Appetizers, starters, fish, poultry, even some desserts. It's incredibly versatile.

What does "on slats" mean?
This is the period when the bottles rest horizontally in the cellar after the secondary fermentation. The yeasts work, the aromas develop. The longer it lasts, the more complex it becomes.
