Our Sauvignon Blanc is a dazzling white wine. We vinify it using skin contact maceration – in other words, we let the juice soak into the skins for a few hours. The result? The full expression of Sauvignon Blanc is revealed: grapefruit, exotic fruits, boxwood… but with exceptional breadth and persistence. It's a Sauvignon Blanc that makes a bold statement.

🌼 What you will find

To the eye: pale yellow with golden highlights, radiant with light
On the nose: intense grapefruit, lime, passion fruit, elegant herbaceous notes (the emblematic boxwood of Sauvignon)
On the palate: fresh and vibrant, remarkably aromatic, with an infinitely persistent finish

🔬 What is pellicular maceration?

Simple version: instead of pressing directly as usual, the juice is left to macerate with the skins for a few hours.

Why do we do this? Because the essence lies in the skins: the pure aromas, the noble texture, the minerality of the terroir. By leaving the juice in contact with the skins, we capture all this richness. The Sauvignon Blanc retains its legendary aromatic intensity, while gaining in complexity and depth.

🎯 His thing?

It is aromatic, as a Sauvignon should be (grapefruit, boxwood, exotic fruits), but it possesses more structure, more depth. It is not simply a crisp white wine to be enjoyed quickly: it invites contemplation.

The must-tries: fine oysters, briny shellfish, prime fish tartare
The fragrant ones: Thai cuisine, spring rolls, refined ceviche
Cheeses: the full range of goat cheeses (fresh or long-aged)

❄️ Instructions for use

Serve it chilled (10-12°C) but never ice-cold – to preserve its full aromatic range. Let it breathe for 15 minutes in the glass; it will reveal even more nuances. It can be enjoyed young but can improve over 2-4 years for those who appreciate evolving white wines.
